Ok, mine isn't 'sweet' because I'm not a baker but this was really lovely.
Please keep in mind it's summer here and half my household are vegetarian :)
You will need a cob loaf for this recipe (large round loaf of bread approx 30cm)
Large pan of roasted veges, I used ...
Pumpkin
onion
zuccini
eggplant
sweet potatoes
I also roasted some garlic with the veges for flavour and used later in the gravy.
Once roasted, allow to cool and then remove the top of the loaf (put to side) hollowed out and filled with alternate layers of the roasted veges. One of the layers was with the leftover bread that I removed. I also included a layer of raw mushrooms to help soak up the juices.
Once filled I made a thick gravy with the vege juices and the garlic and poured a little on top of the layers to fill to the top.
Replace the lid, cover in cling/plastic wrap and put on a plate in the fridge with a plate on top to help set it. Leave for up to 24 hrs.
I put this back in the oven for 15 mins to crisp on the outside on Christmas day, roaring success :DD :((:m
