My new favorite recipe...
 
I forget where I got this & this is from memory but I'm in LOVE with these brownie/muffin treats:

1 box devil's food cake mix
1 can solid pack pumpkin (15 oz.)

Directions:
Mix together. Add nothing else. It will be thick.
Spray muffin tin.
Makes 1 batch.
Bake at 400 degrees for 20 minutes.

Cool & eat.

We had nothing at the commissary but pie filling pumpkin (so preseasoned) and I loved them! The little ones ate it all in one sitting.

I thought they were more pumpkin-y. But not like pumpkin pie pumpkin-y. Very moist & delicious!

I've heard these are great and a great way to eliminate eggs - co-worker gave me this recipe from her weight watchers book.

Well, I can't wait to try it! But I have to wait till next month when I start eating sugar again... I've also seen a recipe called Diet Chocolate cake that is basically one can of diet cola and a chocolate cake mix so you don't use eggs or oils. Also says you can use diet sprite or 7up for a lemon, white, or yellow cake.
