I do the same thing. When I want to be really fancy, I put them in a pastry bag with my largest decorating tip and make pretty designs.
I recently read a tip somewhere to make the whole thing right in the bag. Use a heavy duty freezer bag appropriate to the amount you're making. Seal it and squish the yolks. Add your other ingredients and then just kneed until it's mixed. Snip off the tip and pipe. It saves you from having to wash the bowl.
