Simple Salad Dressing
I started making my own salad dressing when I had was pregnant and had gestational diabetes. My DH now prefers it over any sort of bottled brand, and so do I. I've gotten raves anytime i've made it for anyone else, too. Here's my secret recipe (shhhhh....) - it's so easy!
2 parts olive oil - for 2 people, approx. 4Tbs.
1 part balsamic vinegar - approx. 2 Tbs.
1 packet splenda (approx. 1tsp.)
McCormick Garlic Pepper Grinder (I use around 10 cranks, approx. 1tsp.)
dash of salt
optional 2Tbs. orange juice
Whisk all ingredients together and pour over salad greens. Toss & go!
My very favorite salad to put this over is a mix of the following:
Mixed Greens or just baby spinach
mandarin orange segments
toffee flavored pecans or toffee flavored almonds
crumbled blue cheese or shaved parmesean
*toss in some fresh blueberries, strawberries, raspberries too if you have them on hand!
