August 2011 Recipe Card Challenge

Dear friends: Sorry for my "absence" this month. I had surgery the end of July and it's taken a bit longer to feel better and do more than the daily, bare necessities -- guess I'm not as young or resilient as I used to be! : )

I will be responding to all your e-mails and posting some comments in the forum -- thanks for your patience in the meantime. You've all done really well this month with a tougher-than-normal challenge category -- I'm impressed with the quality of the cards and variety of the recipes.

Okay - had to think about this recipe most of the month since I don't can much, but I would like to make these next year as our garden is being expanded as I type.
I hope it's good, I haven't tried them yet, but will next summer.

Don't let the "green tomato" part throw you off. The flavor blends with the apples and raisins and you don't really taste the tomatoes, they are there mostly for texture, I think. This is a heritage recipe through my mother's line. I beleive the tomatoes were originally used to reduce the number of apples needed. Don't judge it based on previous experience with mincemeat either. It tastes nothing like the stuff you find in the store. This is really yummy!

Neener... what a great idea. I've done jar gifts too, but completely missed my thoughts for this challenge. Way to stretch it! Love the tags too! May even try some for gifts this year. Thanks again for the layout & recipes!

While I have never canned anything in my life, I have used Canning jars to make food gifts on many occasions. It's a bit of a stretch for the topic this month but...it's all I've got. These two recipes were big hits with the recipients in the past.

I don't can, but this recipe does use a CAN of tomato soup. I just really wanted to start being involved in these challenges and start collecting some great recipes! Hope you'll accept me into the club with this recipe for Porcupine Meatballs.....
