I found this recipe in an old cookbook given to me by my mother at the time of my marriage 52 years ago. It has been the mainstay of many meals through those years!

Another good one shared by a friend.

In many of these the amounts are not specific because I am sure more people know how to 'make' according to their family preferences, appetites, etc. I do hope this works for anyone tempted to try any or all of my submissions.

This is something I remember from High School football games. We would be so cold, that when they handed us our frito pies, we could barely get the food in our mouths because we were shaking so from the cold. I still make these and love them. Super quick, super easy, and super good!

Vegan Blueberry Cobbler

Thanks to Erin in Lake Havasu City, AZ.

Crumble Topping

1 1/2 cups shredded coconut

1 1/2 cups walnuts (Optional: soaked and dehydrated to make them dry and cripsy. If you don't have a dehydrator,

then toast in the oven at 400 degress for 5 minutes or so. These are no longer 'raw'.
0 - 1/2 tsp. salt

1/3 cups pitted dates; preferably medjool

Filling
3 cups blueberries frozen, thawed and drained

1/2 cup pitted dates

2 tsp. lemon juice, preferable freshly squeezed

1/8 tsp. cinnamon

Make the cruble topping: Porcess all ingredients in a food processor except the dates. Add the dates one at a time to form coarse crumbles.
Make the filling: in a Vitamix or blender, combine 1 cup blueberries with dates, lemon juice and cinnamon. Then toss in a bowl with the remaining 2 cups cherries.
Put fruit mixture in a square glass baking dish. top wityh crumble topping. Refridgerate until ready to serve. Or, you may serve individually placing blueberry mixture

directly into serving dishes and top with crumble topping. Refridgerate until ready to serve.

Serves 3 recipe can be doubled and does so nicely

Variations:

May use frozen cherries or strawberries

I do not know if you are aware of it, however it/your image needs to be 600 on it's widest/longest side & it should be reduced appropriately on all sides.

Default Minestrone

This recipe for Minestrone appeared about seven years ago in the Seattle Times newspaper. I make it often, and it is an absolutely wonderful Minestrone. Bakes away filling the house with warm wonderful aromas--wonderful in winter, or anytime!

Default Russian Tea

I have had this recipe for over fifty years, and make it and store it every year. It reminds me of the Scandinavian winter wine "Glog" without the wine. Add an orange slice to the tea, or stir in more instant tea if you like it stronger.

Default Glogg

Northern European countries that have such long-dark winters, traditionally will have various hot drinks to warm the winter nights, Mead, Wassail and Glogg! This recipe came to me from my dearest friend (now no longer with us) who lived in the far North of Sweden. I tasted Glogg when I visited her before she died, and decided to come up with a dry-and storable substitute, hence the Instant Glogg recipe. I package several servings of the mix in a cello bag, then top it with a festive bag topper, and tie it to a bottle of red wine for a quick and different winter gift idea. Tell ya--it's VERY VERY warming!
