I have been banned from the computer since Christmas because of a viral eye infection in BOTH eyes. I looked like a green eyed lizard. All you could see were green eyes and blood red everywhere else. Sheesh...what a way to have a holiday!!

Take what time you need.

Thank you and yes, mine are better. This morning DH came walking in and said I think I have what you had...sure hope not! Oh, bless your heart, you fought it for 6 months? I hope we don't have it like that.

Hey, everyone. Toiny is working on the problem of how things are displaying in the recipe card challenge gallery. Everything is showing up as a SQUARE. Let's hang tight before posting anything else -- I'm hoping it will all be resolved soon.

UPDATE on December cards: I'm getting everything organized and bundled up so I can get download links to all participants ~ and realized I am missing cards from a few people. I've hopefully sent messages to the right people so we can get this finalized.

As of right now, there are 94 recipe cards, 76 blanks, and 5 "extra" things. Wow!! Fantastic work!

Also: I think I've sent the coupon code for January's starter kit to everyone who earned it. If you haven't received the code from me, send me a message here or to LetMeScrapbook at hotmail dot com

If anyone has this recipe with measurements I would so love it, I can not make to taste like my Mom's.

[QUOTE=Cath_;89618]If anyone has this recipe with measurements I would so love it, I can not make to taste like my Mom's.

I, like your mom, no longer use specific measurements for pot roast, but I know this recipe would taste a lot better if you salt and pepper the roast on all sides, then heat enough oil to cover the bottom of your dutch oven, brown the roast one side at a time on medium heat. What you're trying to do is get a nice mahogany (not black, not light brown) color all over your roast. After that is accomplished, then is the time to add your water and let it simmer on the back burner for a few hours (I'd throw in a couple onions at this point, but I don't know about your mom. They get nice and smushy after cooking, so you really almost wouldn't notice when you're eating the finished product. or you could fish them out and discard at the same time you remove the roast). Salt and pepper the cooking liquid to taste, before adding the noodles. If you do all this, it will go a long way towards creating a tasty broth to boil those noodles. Sum it up: browning flavors the meat, which flavors the water (broth), which flavors the noodles. It takes a while, which means that mom can tidy the kitchen while the meat browns, tending it every once in a while, then go get the rest of the house clean, go shopping, or SCRAPBOOK while you wait for that roast to get nice and tender! Start about five hours ahead, and you should have no trouble shredding that baby when the time comes. Mmmmmm!

Got a couple of cards done. Not really comfort food, but the Pumpkin Banana Bread was too good not to share! I made them into muffins - yummy!

Here's mine - it's really an appetizer, but for me the gooy cheese and salty creamy mix is the ulitmate in COMFORT food for me. I love it.
