y traditional after Thanksgiving meal is Turkey Congee, a meal I adapted from a Vietnamese soup recipe. I make a rich stock from the Thanksgiving Turkey carcass and boil some soup noodles. Then I cut up leftover stuffing and turkey in cubes, add the carrots and celery I used to make the broth and add any other appropriate Thanksgiving leftovers, cheeses, veggies, even mashed potatoes and gravy in small bowls. Each person prepares the soup to their taste adding as much as they want of the leftovers in their bowl and ladling hot broth over them. YUM!

We got to take the carcass home after Thanksgiving Dinner. I made the stock on Saturday and on Sunday after a day of railfanning, David joined me for the traditional Turkey Congee. He’s not so adventurous with the leftovers in it, but he liked it and says we can do it again next year!
