Makin' Ice Cream
JOURNALING: I went to a fun ice-cream making class at the home of Charlotte & Olivia’s Sublime Ice Creams owner Jim Cushing on 5/18/13. Our four-person class learned the year-old company was founded because Jim wanted to make ice cream with the flavor and texture he remembered from his youth when his family hand-cranked ice creams in a big, rock-salt-filled churn. His locally-sourced, all-natural ice creams are made in a small commercial kitchen, but stored in his basement freezers until he can deliver the precious pints to members of his ice cream club or the two Hills Markets that stock his signature and speciality flavors. He also sells during the summer at the New Albany farmer’s market.
During class, we each had a work station where I made “Strawberry Meringue” ice cream. Others made “Amaretti with Chocolate,” “Limone Bianco,” and “Buckeye Proud” (made with Columbus’ own Krema Nut peanut butter). We got to take home two small containers of each flavor. We were then given a demonstration and recipe to make an ice cream base, from which we can create our own unique flavors.
As a further treat, we got to sample three signature flavors, “Buttered Popcorn,” “Caffeine,” and “Fleur de Sel & Caramel.” And, as a special treat, we got in on the ground floor of a still-in development flavor, “Honeycomb,” made with honey from bees from a local apiary. YUM-O!

Made with beans from Columbus’ Backroom Coffee Roasters, “Caffeine” definitely has a pure coffee flavor, but I don’t like coffee!
“Fleur de Sel & Caramel” - Oh my!
The honey flavor of the new “Honeycomb” hits you as the ice cream begins to melt in your mouth. BEE-utiful!
