Carol's Macaroni and Cheese Surprise

Kit from Maurine Stettler Let Me Scrap.

Cook the package of elbow macaroni according to package directions and set aside.
Make a Roux with flour and real butter. Melt some butter and add the flour stirring with a whisk until it is thick. In a large quart Pyrex glass measuring cup heat about 2 to 3 cups milk depending on the amount of macaroni being cooked. When the milk is warm to hot, mix a very little bit of milk in a glass bowl with some Roux with the whisk adding a little at a time as not to get the sauce lumpy. Make enough white sauce to add to the macaroni. When the white sauce is not to thin and just right, add lots of grated Cheddar cheese making the sauce very, very cheesy. Now grade a little bit of white onion and some salt and pepper to taste. Mix all this together and put in a baking dish and add lots of grated cheddar cheese on top. Bake at 350 degrees until bubbly and cheese has a cheesy crust on top.
Note: I use left over any other cheese I have to the grated Cheddar in the basic sauce. My family loves the very cheesy taste. It is not always the same. I tried to remember how I make my Macaroni & Cheese with no recipe. The secret is the grated onion and not to much to be overbearing.
