This is a recipe we made up several years ago when we had a bunch of leftover baked potatoes. The "surprise" part comes from the optional ingredients you choose to add in depending on what you have on hand -- can be different every time. You can also make this with canned potatoes, hash browns, or even freshly boiled potatoes you dice up and cook.
